Coconut Kheer Recipe: Hariyali Teej festival is very special for women. On this day, not only is fasting observed, but special dishes are also made, which are offered in the puja and distributed among the family. Kheer has a different significance among sweet dishes. Ingredients to make Coconut Kheer:
Full cream milk – 1 liter
Grated fresh coconut – 1 cup
Condensed milk – ½ cup (optional)
Sugar – 3-4 tbsp (according to taste)
Green cardamom powder – ¼ tsp
Dry fruits – chopped cashews, almonds, pistachios
Ghee – 1 tbsp
Saffron threads – few (optional)
Method:
Boil the milk: Add the milk to a heavy-bottom vessel and boil it on medium flame. When the milk comes to a boil, reduce the flame and keep stirring in between.
Add coconut: Now add the grated coconut to it. Mix it well and let it cook on a low flame so that the coconut dissolves well in the milk and its flavour comes out.
Add condensed milk and sugar: Now, add condensed milk and sugar to it. Condensed milk will increase both the taste and thickness of the kheer. If you want, you can also use only sugar.
Add cardamom and dry fruits: Now add cardamom powder and chopped dry fruits to it. These bring both fragrance and crunchiness to the kheer.
Fry dry fruits in ghee: Heat ghee in a small pan and fry some cashews and almonds in it till they turn light golden. Now add them to the kheer.
Garnish with saffron (optional): If you want, you can soak some saffron in milk and add it to the kheer. This will give both color and special aroma to the kheer.
Serve cold or hot: You can serve coconut kheer hot as well as cold. After the fast of Teej, its taste is going to seem even more special.
Special Tip:
-If you do not have fresh coconut, then you can also use desiccated coconut, but the taste of kheer made with fresh coconut is different.
-If you want, you can also add some sago or rice to it, but traditional coconut kheer is also delicious without grains.
