One thing I absolutely love about my Laura Ashley Slow Cooker is just how beautiful it looks on my kitchen countertop. When friends and family pop over to my place, they're always commenting on how lovely it is - and it really is.
Super easy to use, and clean, I couldn't be happier with the pretty cooking appliance that helps create melt-in-the-mouth meat. Looking for some recipe inspiration, I turned to Instagram where I found a video by Nathan Anthony, author of cookbook Healthy Fakeaways. On his Instagram page, Bored Of Lunch, I came across his recipe for slow cooker creamy pulled ham with mash, peas, and parsley sauce.
"This recipe reminds me of my childhood," Anthony wrote on his page. "My mum would always make this... so easy to make."
Creamy pulled hamIngredients
- 1kg gammon (steep overnight before cooking to remove salt)
- 500ml of chicken stock
Parsley sauce
- 600ml milk
- 50g butter
- 35g plain flour
- One tbsp wholegrain mustard
- Handful of fresh parsley, finely chopped
- Pepper
Serve with:
- Mashed potatoes and peas
To steep the encased gammon, soak in a large pot of cold water overnight in the fridge.
Place the encased gammon into the slow cooker with 500ml of chicken stock and cook on high for six to eight hours.
During that two-hour window, you can make mashed potatoes and the parsley sauce.
Add butter to a saucepan on medium heat, then add flour to make a paste.
Gradually add the milk, one tablespoon of mustard, fresh parsley, black pepper and mix until you reach your desired consistency.
Shred the ham, then serve with mashed potato, parsley sauce and peas.
Do note, this delicious recipe is great for family meals or for when you want some left over for another day.
