
If your steaks keep turning out dry or chewy, the problem might be your cooking method. Cooking them on the hob may be traditional, but it's not always the best choice for achieving that perfectly cooked steak. Stepping away from the frying pan could be the best move you make for a juicy and tender meaty dish.
One of the UK's leading cookery writers, Justine Pattison, has taken to BBC Food to share her go-to air-fryer steak recipe. She stated: "The key to juicy, tender steak is to air fry straight from the fridge, rather than allowing the meat to come to room temperature. Perfect with salad and new potatoes.
"This recipe is perfect for cooking standard steaks, around 2cm/¾in thick. If you're cooking fillet steak, increase the cooking time a little. This method is not recommended for thin-cut steaks, unless you are happy to have a more thoroughly cooked result."

Ingredients- Two beef sirloin or rump steaks (225g/8oz each)
- Two teaspoons of extra virgin olive oil
- Sea salt flakes to taste
- Freshly ground black pepper to taste
- Salad or vegetables to serve (optional)
- Freshly boiled new potatoes or baked potatoes to serve (optional)
To begin, place the grill pan (crisper plate) or tray inside the drawer or basket of your air fryer, set the temperature to 200°C, and allow it to preheat for about three minutes.
While the air fryer heats up, prepare the steaks by placing them in a bowl and tossing them with a drizzle of olive oil to coat the surface lightly.
Justine urged: "If your steak has a very thick layer of fat, trim some off before cooking, as it can take a little longer to cook and you don't want your steak to be overdone before the fat is ready."
Transfer the oiled steaks to a plate or cutting board, then season both sides with salt and freshly ground black pepper. If you want a bold, peppery crust on your steak, use more pepper, but for a milder taste, scale it back.

Once the air fryer is preheated, carefully place the steaks inside, ensuring there's some space around and between each one. Let them cook for four minutes before turning them over using tongs or a pair of forks.
Cook for another four minutes on the other side for a medium-rare finish. If you prefer your steak well done, increase the cooking time by about one extra minute on each side, adjusting to achieve your desired level of doneness.
When the steaks are cooked, transfer them to plates. If any juices have collected beneath the grill pan, carefully remove it and pour the juices over the steaks. However, don't worry if no juices are released during cooking, as not all cuts will produce them.
Serve the steaks immediately alongside your choice of sides.
